Bring a #medium pot{} of salted water to a boil. Wash and dry produce. Add @lo mein noodles{8%oz} to the pot. Cook, stirring occasionally, until al dente ~{5%minutes}, then drain.

Place @tofu{12%oz} in a #large bowl{}; season with @salt{½%tsp} and @black pepper{¼%tsp}. Add @cornstarch{2%tbsp} and toss until evenly coated.

Heat @cooking oil{2%tbsp} in a #large pan{} over medium-high heat. Add tofu and cook until crispy on all sides ~{5%minutes}. Transfer to paper towels to drain.

In a #small bowl{}, whisk together @hoisin sauce{2%tbsp}, @vegetarian oyster sauce{2%tbsp}, @brown sugar{1%tbsp}, @sriracha{1%tsp}, and @sesame oil{1%tsp}.

Wipe out the pan and return to medium-high heat. Add @onion{1%unit} (thinly sliced), @sugar snap peas{4%oz}, and @scallions{2%unit} (whites only); season with salt and pepper. Cook, stirring occasionally, until tender ~{3%minutes}.

Pour the sauce over the vegetables and cook until glossy ~{1%minute}. Add drained noodles and @butter{1%tbsp}; toss until noodles are thoroughly coated in the sauce. Taste and season with salt and pepper if desired.

Divide lo mein between shallow bowls. Spoon any remaining sauce over the top. Top with crispy tofu, scallion greens, and @sesame seeds{1%tbsp}. Serve.
